Works as a breakfast, brunch or an all-day option which you find on many menus across England.

It also gets the name fry up, because most of it is supposed to be fried in one pan, with all that delicious flavour from the lard, bacon and sausage fat, each coming together with the ingredients to add good flavour. Then you fry your bread slices in the remainder fat until crispy, which we call fry bread.

Healthier options

The full English breakfast can be made healthier by grilling a lot of the ingredients.

Bread can be toasted and black pudding can also be grilled.

The choice is yours with that, but this recipe will show the fry up way because it is the tastier option.

Choose pork sausages with a high pork content too, aim for 90% and up. Nobody needs to eat cheap fillers they use to bulk the sausages up.

Ingredients

  • 8 Rashers Unsmoked or Smoked Back Bacon
  • 8 Pork Sausages
  • 4 Eggs
  • 4 Hash Browns
  • 4 Slices Black Pudding
  • 8 Mushrooms
  • 1 Tin Baked Beans
  • 1 Tin Chopped Tomatoes
  • 4 Slices Fresh Bread
  • 2 tbsp Lard

Instructions

  • In a large frying pan, heat up 2 tbsp lard on a medium-high heat, until it is hot.
  • Grill or deep fry your hash browns. Until they are crispy and golden brown.
  • Add your sausages first to the frying pan, turning once browned on one side until cooked. About 15-20 minutes. Transfer to the bottom shelf of your oven on a low temperature to keep warm.
  • Next, add the bacon and fry on both sides until the fat is crispy and browns slightly. About 10 minutes. Place with the sausages in the oven to keep warm.
  • Place the black pudding slices, and fry on both sides. About 5-10 minutes. Keep warm.
  • Crack in your eggs and fry until golden along the bottoms. Transfer to a plate.
  • Drop in the mushrooms and your bread slices, and fry until the mushrooms have shrunk down and darkened in colour, and your bread has toasted on either side. Add more lard if needed.
  • In the microwave or saucepans, heat up the beans and tomatoes, and serve into serving dishes or ramekins.
  • Mix it all together on the plates and enjoy with a nice cup of tea!

Notes

If you are cooking for yourself, then you could cook it together in the pan at once like I done in the photo, but in an order….
Sausages first, once turned and browned on one side, add your bacon, and fry. Once you flip the bacon, add the black pudding and so on, and cook the fried eggs when the space is available in the pan.
Or if you want, grill the bacon, sausage and hash browns. Bacon cooked to crispy fat, sausages browned all way around, and cooked through in the middle, and the hash browns, crispy and cooked through in the centres. Then just fry your black pudding, eggs, bread, and mushrooms in 1 tbsp lard. Just remember that mushrooms always soak up the fat, so it is best cooking them last because they do not take that long.
Hash browns can be deep fried, grilled, or oven cooked.
